無賃乗車 - Colarse sin pagar - Sneaking in




今日の夕方、2時間半の会議を終えて家に戻ると、妻が逆上していた。怒りで目玉は飛び出さんばかり、今にもその辺の「チョニー」が吐くような罵詈雑言を連発してしまいそうな勢いだった。ちなみに、「チョニー」とは日本語で言えば「タチが悪いヤンキー」のようなものだ。

理由は、今朝駅の自動改札口で、また誰か(今回は若い女性だったらしい)に割り込まれたからだという。つまり、自動改札口に切符を入れ、扉が開いて自分が通ろうとするスキを狙って、後ろから誰かが(切符なしで)一緒に入ってしまう、ということをやられたのだ。彼女はこの手の行為に耐えられないらしい。

もう何年も前の話になるが、僕が初めてイタリアへ旅行した時、公共交通機関の切符をどこで買えばいいのかわからなくて、通行人に聞いたことがあった。地元の人達は、皮肉めいた笑みを浮かべながら、「近くのタバコ屋で売ってるよ」と教えてくれた。タバコ屋の店主も、僕がバスの切符を買おうとしていることをずいぶん面白がっていた。バスに乗ってみて初めて理由がわかった。高齢のご婦人方を除いて、誰ひとり切符を買っていなかったのだ。たぶん、お年を召されたご婦人方は、他の乗客のように、検札員がバスに乗ってきた時に後部ドアまで猛ダッシュして下車するだけのスピードを持ち合わせていなかったのかもしれない。それに検札員だって、乗客の98%が突然バスを降りていくのを気にも留めていなかった。車内に残ったのはおばあさん1人と僕だけ。「これじゃスペインの方がまだマシだ」と内心ほくそ笑んだのを覚えている。ところが、最近どうやら状況は変わってきているようだ。

スペインの鉄道会社は、「検札員に給料を払うより、無賃乗車を見逃した方が安上がり」という事実に気づいたらしい。それでも時々、駅で警備員(俗に「セグラタ」と呼ばれている)を見かけることがある。彼らはよく、幼い子供を連れたモロッコからの移民女性に対して、横柄な態度で切符を見せるよう命じていたりする。挑発的な外見をしたスペイン人の若者たちや、190cm以上ある大柄のアフリカ人男性が柵を乗り越えてホームに入っている時は、見て見ぬふりをしているのだが。こんな状態なので、地下鉄でも電車でも、切符を買わない人は結構いる。しかも、貧しい移民にかぎらず、イタリアでは切符を買っていたような老婦人たちでさえ平気で無賃乗車していることがある。

僕は妻に、「もっとユーモアのセンスを持とうよ」とアドバイスした。相手に立ち向かったところでムダなのだ。それどころか、罵倒されたり、暴力をふるわれたりするかもしれない。そんなリスクを冒したって、警備員みたいに給料をもらえるわけじゃない。それでも、妻は怒りを抑えきれず、こう続けた。
「今日後ろから入ってきた子はね。片手にチョコクロワッサンを持って、食べながら割りこんできたのよ。そう、駅のすぐ側のあの店の、わたしがいつも眺めているけど絶対に買わないあのチョコクロワッサン。で、反対の手に最新モデルのiPhoneなんか持って、しかもブランドもののスニーカーまで履いていたんだから!」

僕は内心、彼女にこう言いたかった。
「その子はきっと、両手がふさがっていたから切符を入れられなかっただけなんじゃないかな。君がチョコクロワッサンを買わないのは、太りたくないからだろう?ブランドもののスニーカーや最新モデルの携帯を買わないのは、君が倹約家だからだよ」

でも、何も言わなかった。いつしゃべり、いつ黙るべきかを知る。それが賢者の知恵というものだ。

Colarse sin pagar

Hoy, cuando he vuelto a casa del trabajo tras una reunión de dos horas y media, me he encontrado a mi mujer tan enfadada que los ojos se le salían de las órbitas y parecía que iba a ponerse a echar sapos y culebras por la boca como cualquier choni. Una choni vendría a ser como una “ヤンキー”con muy mal carácter. Y es que, al coger el tren, otra vez alguien (una chica) había aprovechado el momento en que ella metía el billete en la máquina de entrada para colarse detrás de ella sin pagar. Eso es algo que no soporta.

Hace muchos años, cuando viajé por primera vez a Italia, no sabía dónde se compraban los billetes para transporte público, así que pregunté. Me respondieron amablemente, pero con una sonrisa irónica, que en un estanco cercano. Al señor del estanco le pareció muy divertido que comprara billetes para el autobús, y, al subir al autobús, descubrí por qué. Nadie, excepto las ancianas se molestaba en pagar billete. Tal vez eran demasiado lentas para bajar rápidamente por la puerta opuesta a la que utilizaba el revisor, que ni se molestaba en mirar cómo el 98% del autobús se vaciaba: todos menos la anciana y yo. Yo sentía la íntima satisfacción de pensar que en mi país todo funcionaba mejor. Pues ya no.

Han descubierto que cuesta más pagar el sueldo a los revisores que permitir que mucha gente se cuele sin billete. De vez en cuando se ve algún empleado de seguridad (coloquialmente “segurata”) que es capaz de pedir con mala educación el billete a una pobre inmigrante marroquí con niños pequeños, pero mira hacia otro lado cuando saltan la barrera delante de él jóvenes malencarados de aquí o africanos de metro noventa. Así que en el metro y en el tren, mucha mucha gente se cuela. Pero no pobres inmigrantes sin dinero, que ellos también, sino hasta las ancianas que en Italia pagan.

Yo le he aconsejado a mi mujer que se lo tome con sentido del humor. No merece la pena encararse con alguien que puede insultarla o tal vez golpearla. A ella ni tan siquiera le pagan como al segurata; pero no puede evitarlo. “Por si fuera poco”, añade, “la chica que se ha colado detrás de mí llevaba en una mano uno de esos croissants de chocolate que hay en la pastelería junto a la estación que siempre miro y nunca compro, y en la otra el último modelo de iPhone. ¡Y unas bambas de marca!” Yo he pensado: “Seguro que ha tenido que colarse porque llevaba las dos manos ocupadas. Si no te compras el croissant de chocolate, es porque no quieres engordar, y si no te compras bambas de marca, o un móvil de último modelo, es porque prefieres ahorrar.” No he dicho nada. Saber cuando hablar y cuando callar es la sabiduría de los sabios.




Sneaking in

Today, when I arrived home after a long school meeting, I found my wife so angry that her eyes were popping out and she seemed to be about to spit dirty words like a vulgar “choni”. A “choni” is a low class girl who prefers shouting to talking and dirty words to politeness. They waste no sweet words.

Well, my wife was boiling mad, because, when she inserted her ticket to get into the train station at the entrance gate, someone (a girl this time) had sneaked in just behind her, again, in order not to pay the fare. That is something she cannot stand at all.

Many years ago, when I went to Italy for the first time, I didn´t know where I could buy tickets for public transport so I asked about it. I was politely answered, with a kind of ironical smile, that at the nearest tobacconist´s. The person who sold me the tickets seemed amused by the fact that I was buying tickets, and when I got on the bus, I found out the reason why. Nobody, but extremely old ladies bothered about tickets. I guess old ladies were too slow to get out of the bus when a conductor got in. When a conductor came through the front door, 98% of passengers just got out through the rear one: the other 2% were the old lady and me. Somehow, I felt a kind of inner satisfaction thinking that things worked much better in my country. Not anymore.

They have decided that it is more expensive to pay conductors than letting people sneak in without paying. Now and then you can see a “segurata” (a bad name for security officer) who dares to ask unpolitely a poor Moroccan immigrant with her small kids to show their tickets. However, he will look the other way when some young wild looking thugs just jump over the entrance gate, and so he does when six-feet-tall young Africans do the same. So, too many people here travel on buses, by train or underground without paying; not only poor immigrants with no money, but also those Spanish old ladies that would pay the fare if they were Italian.

I have advised my wife to take it easy, with a bit of humour. It is no worth risking being insulted or even beaten if you defy people who try to sneak in behind you at a train station. She is not even paid for doing that like the “segurata”. But she cannot help it. “To add insult to injury”, she added, “the girl who sneaked in behind me was holding in one of her hands one of those chocolate croissants from the pastry shop near the station I always look at but never buy. And  she was holding with the other hand the latest iPhone model. And good brand sneakers!” I have thought: “Surely she had to sneak in because her hands were both busy. You don´t buy chocolate croissants because you want to keep your slim figure and look good, and if you don´t buy good brand sneakers or an iPhone is because you don´t want to spend money on them.” However, I have not said a word. Knowing when to speak and when to keep your mouth shut is the wisdom of the wise men.

スポーツという名の新宗教 - Deporte, la nueva religión - Sport, a new religion


レアル・マドリードファンの生徒とFCバルセロナファンの生徒が、「クリスティアーノ・ロナウドとメッシはどちらが上か」と真剣に言い争っているのを聞いていると、僕はあるシーンを思い出す。40年前、カスティージャのメセタの集落で、2人のおばあさんが、「『聖母ピラール』と『聖人ブラス』のどちらに祈れば効きめがあるか」というテーマで激しく口論していた光景だ。実際、多くのスポーツファンが試合を観るまなざしは、昔のおじいさんおばあさんが宗教に注ぎ込んでいた情熱と熱意を連想させる。ファンの多くはまず試合を観て、その後ひいきチームの専属チャンネルで試合の再放送を観て、さらに、過去の名試合のDVDを買ったり、ネットから動画をダウンロードしたりして、何度も何度も観戦する。

3年前のリーガクラシコ「FCバルセロナ対レアル・マドリード」で、バルサが5-0の大勝を収めた翌朝、路線バスに乗ったら、運転手が前夜の試合中継の録音を大音量で聞いていたことがあった。乗客の中にはレアル・マドリードサポーターもいたかもしれないが、そんなことはこの際どうでもよかったらしい。サッカーチームのサポーターにもだいたい共通することだが、ファンにとって、「勝利」と「敗北」は、単なる「喜び」と「悲しみ」以上の意味をもつ。スペインでは、夫のひいきチームが惨敗した場合、もう夕食は作らなくてもいいと判断する妻たちもいる。どうせ食べようとしないからだ。一方で、絶好調チームのホームタウンでは、その年の出生率が伸びるとも言われている。「どんなに大差で勝っていても、バルサの試合を観ていると苦しくなる」と明かすバルササポーターを何人か知っている。ボールにさえめったに触らせてもらえず、ほとんど勝ち目がない相手チームのサポーターの方がよっぽど苦しいだろうに、と思うのだが…。勝利のエクスタシーが訪れた瞬間、ファンは勝者と同化し、苦しみも報われる。負けても、数日後にはまた次の試合がやってくる。

教師がひいきのチームを持つのは好ましくない。かりにどこかのファンであっても、公言しない方がいい。僕も、昔ほどではないがスポーツ観戦は好きな方だ。ただし、いい試合にかぎる。つまらなければすぐテレビを消してしまう。それでも、スポーツファンの例外にもれず、記憶に刻まれた試合がいくつかある。まず、1977年に白黒テレビ(!)で観た、ベルグラードでのユーゴスラビア対スペイン戦。1-0でこの試合に勝ったスペインは、12年ぶりのワールドカップ出場を果たすことになる。試合内容はもちろんだが、試合後フアニートという名のスペイン人選手が相手サポーターに向かって礼儀を欠くジェスチャーを見せたせいで、頭にビンを投げつけられたシーンもよく覚えている。2004-05シーズンの欧州チャンピオンズリーグ決勝で、リバプールがACミラン相手に大逆転勝利を収めた試合も忘れられない。でも、ひとつだけ選べと言われたら…。間違いなく2007年の甲子園決勝、佐賀北高校対広陵高校の一戦を選ぶだろう。何回でも観たくなる、想像を超えた逆転劇だった。経験上、こんなことが起きるのはスポーツの世界だけだろうという気がするが、それでもめったに起きるものじゃない。

人はあいさつがわりに「どこのファンですか」と聞いてくる。もしかすると、相手が「味方部族」に属するのか「敵部族」に属するのかを見極めようとしているのかもしれない。当然、生徒たちも同じ質問をしてくる。
「先生はどこのファン?」
「サガン鳥栖。Jリーグのね」
「そうじゃなくて!ここのチームで!」
FCザンクトパウリ。ドイツ2部リーグの」
生徒たちはあきらめて退散していく。レアル・マドリードかFCバルセロナ以外のチームを応援する連中は、よっぽどの「変わり者」らしい。


Deporte, la nueva religión

La discusión entre dos de mis alumnos, uno del Madrid y otro del Barça sobre si el mejor jugador del mundo es Cristiano Ronaldo o Messi me recuerda mucho una agria disputa de dos viejas hace cuarenta años en una aldea mesetaria sobre si era más efectivo rezar a la Virgen del Pilar o a San Blas . Como si a ellos les importara. Muchos aficionados, sin embargo, asisten a los espectáculos deportivos con una pasión y un fervor que sus abuelos dedicaban solo a los rituales religiosos. Muchos aficionados miran los partidos en la televisión, las repeticiones en el canal de su equipo y compran o se bajan de internet los partidos importantes para volver a verlos.

Hace tres años, al día siguiente un cinco-cero de un partido de fútbol entre Barça y Madrid, el conductor del autobús urbano al que subí escuchaba a todo volumen la grabación del partido del día anterior, sin importarle demasiado los sentimientos de los pasajeros del equipo perdedor, en este caso el Madrid. Tal y como viven el fútbol muchos aficionados, una victoria o una derrota tienen un significado que va más allá de la alegría o la tristeza. Hay señoras que, en caso de que el equipo de su marido sufra una derrota humillante, ya saben que no hay que preparar cena, porque no la querrán. En cambio, dicen que los años de grandes victorias de un equipo suponen un aumento de la tasa de natalidad en el área. Conozco a seguidores del Barça que confiesan: “Sufro viendo partidos del Barça, aunque vaya ganando por goleada.” Supongo que deben sufrir mucho más los seguidores del equipo contrario que ni llegan a tocar la pelota, ni tienen posibilidad alguna de ganar. El éxtasis de la victoria te identificará con los mejores, te hará sentir uno de ellos y compensará el sufrimiento. Y si el equipo pierde, al cabo de unos días hay otro partido.

A un profesor no le conviene tener un equipo favorito. Y si lo tiene, no le conviene decirlo. Aunque no tanto como antes, me gusta mirar deporte, pero sólo si el partido es bueno. Si no, apago la tele. Como le pasa a cualquier aficionado, hay partidos que conservo en la memoria. Recuerdo un partido en blanco y negro de 1977, en que España ganó 0-1 a Yugoslavia en Belgrado. Esa victoria supuso que, tras 12 años, la selección iba a jugar un Mundial de fútbol. Recuerdo eso y que a Juanito, un jugador español, le abrieron la cabeza de un botellazo desde la grada por un gesto injustificable de mala educación al público. También recuerdo la gran remontada del Liverpool contra el Milán en la final de la Champions League 2004-05, pero si tuviera que escoger, lo que no me cansaría de mirar sería la victoria de los alumnos de Sagakita contra los de Koryo en la final del campeonato de béisbol para bachilleratos del 2007. La remontada fue increíble, porque la experiencia nos dice que algo así solo puede ocurrir en el deporte y muy pocas veces.

“¿Tú de qué equipo eres?” preguntan algunos para ser sociable, o tal vez para saber si perteneces a su tribu o a la tribu enemiga. Es inevitable que mis alumnos me pregunten lo mismo.

─Profe, tú, ¿de qué equipo eres?
─Del Sagan Tosu, que está en primera japonesa.
─ ¡No, no, de aquí!
─Del FC St. Pauli, que está en la segunda división alemana.

Me dejan por imposible. Quien no es del Madrid o del Barça es un bicho raro.


Sport, a new religión

A discussion between two of my students, one of them a Madrid FC supporter and the other a FC Barcelona one, about who the best soccer player in the world is (Cristinano Ronaldo or Messi), reminds me of another discussion I witnessed forty years ago between two old angry prigs who tried to decide if it was better to pray to Our Lady of Pilar in Zaragoza or the village patron, Saint Blas. As if they both (the holy ones and the soccer players) cared a bit about that and them. Many sport fans, however, watch sport with a passion and fervour which could only be compared to the ones their grandparents showed at religious rituals. Many supporters watch the games on TV, the replays on their team’s channel and buy or download from the internet the most important ones to watch them all over again.

Three years ago, the day after a game Barça vs. Real Madrid ending 5-0, I was on a city bus. The driver was listening at full volume to the radio recording of the previous day’s game. He didn´t seem to care much about the passengers who could be on the loser’s side. In the way some fans live soccer, victory of defeat have a meaning which goes farther than joy or grief. Some wives know well, that they don´t need to prepare dinner for their husbands, when their team is severely beaten, because they will not have any. On the other hand, it is common knowledge that after a team has had a very successful soccer season, the birth rate goes dramatically up in the area. I know Barça supporters who confess that they suffer watching their team’s games, even when it is defeating their rivals easily. I guess the other team´s supporters may suffer much more, seeing their team with no chance even to touch the ball and whose winning possibilities are zero. The ecstasy of victory will make you feel you are a part of the best and will make up for all your sufferings. And if your team loses, no big deal, there is another game in two days.

It is not advisable for a teacher to support any team. And if they do, it is not advisable to tell anyone about it. I enjoy watching sport, not so much as I used to, but I still do, but only if I think the game is worth. Otherwise, I just switch of. As it happens with any other sport viewers, however I keep some games in my memory. I remember a soccer game I watched black and white in 1977, Spain beat Yugoslavia 0-1 in Belgrade. That victory meant that the Spanish soccer team, after 12 years, could take part in a World Cup. I remember that and that someone from the crowd threw a glass bottle at a Spanish player’s head. His name was Juanito, because he had made the sign of defeat to the crowd at being replaced. A very impolite gest, indeed, I mean from the footballer. I remember the epic comeback of Liverpool vs. AC Milán at the finals of the 2004-2005 Champions League, too; but if I had to choose one game, I would watch again and again a baseball game: Sagakita vs. Koryo students at the finals of the 2007 Baseball Highschool Competition. That was a real comeback, because experience tells us that something like that can only happen in sport and just a few times.

“Which team do you prefer?”, some ask to be sociable, or maybe to know if you belong to their faith or the enemy’s. My students make the same question. How could it be different?

They leave me alone. If you don´t like Barça or Real Madrid, you must be from another planet.

ハムの作り方 - Cómo hacer un jamón - How to make jamón




僕の家族は、スペイン有数のハムの名産地テルエルからそれほど離れていない地方の出身だ。この辺りの土地は海抜800mに位置し、冬は寒く乾燥していて、まさにハム作りに最適な条件をそろえている。今から40年ほど前、この村の経済はまだ農産物の生産に支えられていた。村人はパンを作る小麦を栽培し、余剰分を売っていた。どの家にも野菜畑や果樹園があった。家畜小屋には牛乳やチーズを作るためのヤギ、卵を産むニワトリ、食用のウサギがいて、毎年豚を一頭飼育していた。

僕は自分でハムを作ってみようとは思わない。子供の時に経験した豚の屠殺では、豚が逃げないようにしっぽを捕まえていただけだったし、今だってニワトリ一匹さえ絞められないだろう。そんな僕はきっと、伝統農家の落ちこぼれとなっていたにちがいない。そこで先日、家でどうやってハムを作っていたのかを父に聞いてみた。

父の話によると、昔から伝わるハム作りはだいたいこんな感じだったという。まず、屠殺後の豚の後脚を上部から丸く切り取って、余分な脂、骨についている血管や神経を取り除く。切り取った後脚を平らな台の上にのせ、中央から切り口に向かって手で力強く圧しながら、血を外に出す。内部に血が残っていたら、ハムが腐ってしまうからだ。切り口の骨付近と肉が見える部分に粗塩を強く擦りつける。その他の部分(皮やひづめなど)には塗らない。切り口の部分を下にして木板をのせ、上から重しをして3日間ほど寝かせる。こうすることで、塩が肉を乾燥させ、残りの血も排出される。この時、表面をきちんと綿布で覆っておかなければならない。虫が入ったらハムが台無しになるからだ。

寝かしが終わったら、さらに手で圧して残りの血を出しきる。血をきれいに拭いて、さらに塩で、今度は全体を覆う。再び重しをして、2週間ほど寝かす。気温が低ければ、さらに長い間寝かしておく。数日ごとにひっくり返していく。もうそろそろ吊り下げてもいい頃だが、ここで全体を叩いて余分な塩を落とす。最後に、骨と肉が見える切り口部分にパプリカの粉を塗る。ひづめに丈夫な紐をくくりつけ、虫が来ない涼しい場所に数ヵ月(少なくとも5~6ヵ月)ほど吊り下げて乾燥させる。

夏休みに祖父母の家に行くと、いつもハムがあった。店で売っているような、薄くて柔らかいスライスハムとは違う。どちらかというと、南(アンダルシア)で作られるドライサーモン「モハマ」や、日本で食べて美味しいと思った「鮭とば」に似ていた。祖父母のハムは少なくとも厚さ5mmくらいあって、しっかり硬く、乾いていて、全然塩辛くなかった。たまらない旨さ。幼少時代の味だ。あれから、あんな味に出会ったことは一度もない。


Cómo hacer un jamón

Mi familia procede de una zona no muy lejos de Teruel, uno de los mejores lugares para comer jamón en España, que tiene las condiciones ideales para elaborarlo: más de 800 metros sobre el nivel del mar y un clima invernal frío y seco. Hace unos cuarenta años, los habitantes de aquellas aldeas todavía mantenían una economía de subsistencia: cultivaban trigo para hacer pan y vender el excedente, tenían un huerto para verduras y fruta, criaban  un par de cabras para leche y queso, gallinas para huevos, conejos para carne y un cerdo cada año.

Yo no me atrevería a preparar un jamón. Como mi experiencia en  el sacrificio de un cerdo casi se redujo a agarrarlo por la cola para que no escapase, y como sería  incapaz ni tan siquiera de matar un pollo,  supongo que como campesino tradicional sería un perfecto fracaso. Así pues, pregunté a mi padre.

Según mi padre, tradicionalmente, tras sacrificar al cerdo, se cortaba el jamón redondeando la parte de arriba, se quitaba el  exceso de tocino y se cortaba lo que sobraba junto al hueso (venas, nervios…). Se ponía en una superficie plana y se apretaba con fuerza con las manos para sacar toda la sangre posible,del centro hacia la punta. Si quedaba sangre, el jamón se podía pudrir. Se frotaba con fuerza con sal gorda las zonas de hueso y donde se viera la carne; el resto, no. Luego había que dejarlo boca abajo con un trozo de madera encima y mucho peso unos tres días para que la sal fuera secando el jamón y sobre todo para que la sangre restante saliera. El jamón tenía que estar bien cubierto con una tela de algodón, porque otro factor que podía estropear el jamón eran los insectos.

Posteriormente, se volvía a intentar sacar los restos de sangre apretándolo con las manos, se limpiaba y se cubría con sal, esta vez todo. Una vez más se ponía bajo mucho peso un par de semanas. Con temperaturas muy bajas, más tiempo. Cada pocos días se le iba dando la vuelta. En ese momento, ya estaría casi para colgar; pero antes se quitaba el exceso de sal golpeando el jamón y se cubría la zona del hueso y de la carne con una capa de pimentón. Se ataba un cordel fuerte por debajo de la pezuña y se colgaba unos meses (por lo menos cinco o seis) para que se secara en una zona fresca de la casa a resguardo de los insectos. En verano, siempre había jamón en casa de los abuelos, y no en lonchas finas y blandas, sino parecido al atún seco del sur que llamamos “mojama” o al salmón seco japonés tan bueno que llaman “Saketoba”. Las lonchas de jamón de los abuelos eran por lo menos de medio centímetro de grosor, bien duras, secas y nada saladas. Una delicia. Es el sabor de mi infancia. Nunca he vuelto a comer nada así.

How to make jamón

My family comes from a place not far away from Teruel, one of the best places to eat jamón in Spain, which has the ideal conditions to make it: over 800 metres above sea level and a cold and dry winter climate. About forty years ago, people who lived in those villages still had a subsistence economy: they grew wheat to bake bread and sell surplus, they had a vegetable garden for fruit and vegetables, two or three goats for milk and cheese, a dozen hens for eggs, rabbits for meat and a pig every year.

I would not dare to make jamón. My experience at a pig’s slaughter was reduced to hold its tail at four so that it could not run away. Besides, I wouldn´t even be able to kill a hen, so I guess I would be a total failure as a traditional Spanish farmer. That is why I asked my father about the subject.

According to him, after slaughtering the pig, its legs (jamones) have to be cut off in a round way on the upper part. Excess fat should be removed and so all the veins and nerves beside the bone. The jamón should be placed then on a flat surface and pushed strongly down with both hands to get as much blood as possible out of it, because when blood remains inside, the jamón can rot. Coarse salt must be strongly rubbed on the bone and where meat can be seen, but not elsewhere. Then, the jamón is left face down under a wooden board and about 20 o 30 kilos on it for three days, so that the remaining blood gets out and the salt dries it little by little. The jamón must be covered with a woollen cloth, because another thing that can spoil it is insects.

After three days, both hands should be used to try to get rid of the blood that is still in. Later, it should be covered with coarse salt, this time every single centimetre. Once again it should be put under the pressure of 20 or 30 kilos, but this time for two weeks. Longer in cold weather. Every few days it should be turned round. After about two weeks, it should be ready to hang, but before that, two things should be done: first, excess salt should be remove hitting it, and second, bone and open meat should be covered with a layer of paprika. A piece of rope just under the hoof and hang it from a strong nail for some months (five or six at least) to dry in a cool place well protected from insects. In summer, there always was good jamón at my grandparents’ place, and not those thin soft slices we buy at supermarkets, but similar to “mojama”, dried tuna meat from the south, and similar to that dry salmon meat so tasty that Japanese call “saketoba”. Jamón slices were at least half a centimetre thick at my grandparents´, they were hard to chew,dry and not salty at all. Delicious. That is how my childhood tasted. I have never eaten anything so good ever since.

スペインのハム - El jamón - Spanish jamón


数日前、考えてみた。僕がスペイン国外に住んでいたとしたら、心から恋しくなるのは何だろう。「クリーンな行政」と「市民の利益」を最優先し、自分のポスト維持を後回しにする政治家(いたら奇跡)だろうか。あり得ない。先進国レベルの税金と、第三世界並みの公共サービスだろうか。これもあり得ない。(まだ)30%に達していない失業率?公共医療を受けるための長い待ちリスト?高能率、高スピードの公的機関や司法機関(これも奇跡)?毎年避けて通れない僕ら教師の給料削減?違う。そんなわけがない。

僕が懐かしく思うのは、「ハム」だろう。ハム、少しばかりのいいワイン、ユーモア、好きな仕事ができるという幸運、そして家族。こうしたものがあるからこそ、他のことも何とかやっていけるのではないかと思う。

今から40年前、僕が4、5歳だった頃、祖父母の田舎で「豚の屠殺」を手伝ったことがある。祖父母の田舎ではどこの家族も、毎年仔豚を1匹買って豚小屋で育てていた。餌の大部分は食べ物の残りカスだった。冬の始め、12月だったと思う。豚の屠殺は、お祭りみたいなちょっとしたイベントだった。数家族が集まって、全員で協力して豚を屠殺し、1グラムさえ無駄にすることなく処理していた。

まず、男たちが数人がかりで豚をかつぎ、U字型にくぼんだ木製の台の上に仰向けに寝かせる。男たちが豚を押さえつけていると、僕の祖母が、片手に広い刃の台所包丁、もう片方の手に陶製の水差しを持ってやってくる。僕ら子供たちの仕事は、豚のしっぽをつかまえておくこと。「豚が逃げないように」と言い聞かされていた。今思えば、僕たちは将来のための学習として屠殺に参加していたのかもしれない。

祖母は豚の首に包丁を刺し、傷口からの血を水差しで受け、その血で米入りモルシージャ(血入りの腸詰め)を作っていた。火をつけた藁で豚の表皮を焦がして毛を除いた後は、いよいよ解体。全パーツが処理され、保存用の肉となる。脚は乾燥させる。血は米と混ぜて腸に詰め、モルシージャにする。余った肉に、塩とスパイスを混ぜて腸詰めにすると、ロンガニサやチョリソになる。腸詰めは、ロースの塊と同じようにオリーブオイルで保存される。豚の鼻、舌、耳、頬、足…とにかく全部食べていた。

今の屠殺は、適切な衛生基準をパスするために専門の屠殺場で行われる。それはいいことだと思う。でも、モルシージャも、ロースも、ハムでさえも、昔とはやっぱり何かが違う気がする。それでも僕はハムを懐かしがるだろう。ハムは、言ってみれば、僕の幼少時代の味がするからだ。

この前、バルセロナに長く住む日本人の知り合いに、「日本の何が恋しい?」聞いてみた。答えは「ゴボウ」だった。なぜゴボウ??信じられない…。

母国から離れて暮らすみなさんは、何が一番恋しいですか?
もし外国に住むことになったら、何を一番懐かしむと思いますか?
ぜひ答えが知りたいものだ。

El jamón

Si viviera fuera de este país, me preguntaba hace unos días, ¿habría algo que echara realmente de menos? ¿La incorruptibilidad de la clase política, plenamente dedicada a los intereses de los ciudadanos y no a mantener sus cargos? No. ¿Los impuestos del nivel del primer mundo junto a servicios de nivel del tercer mundo? Tampoco. ¿Un nivel de desempleo que no llega ni al 30%? ¿Las listas de espera de la sanidad pública? ¿La eficiencia y rapidez de las oficinas públicas, de la justicia? ¿Los recortes anuales de mi sueldo de profesor, ciertamente imprescindibles? No, no, no y no. Echaría de menos el jamón.

El jamón, un poco de buen vino, el sentido del humor, el privilegio de poder trabajar y disfrutar haciéndolo y sobre todo la familia es lo que compensa todo el resto de cosas.

Hace más de cuarenta años, cuando tenía cuatro o cinco, fui a la aldea donde vivían mis abuelos para participar en la matanza del cerdo. Todas las familias compraban cada año un lechón, que criaban en una pocilga básicamente con las sobras de las comidas. A principios del invierno, tal vez en diciembre, el sacrificio de cada cerdo era una fiesta en la que  los miembros de varias familias ayudaban a matar y procesar prácticamente cada gramo del animal. Recuerdo que entre varios hombres levantaron al cerdo y lo pusieron sobre el lomo en una estructura de madera en forma de U. Mientras lo sujetaban, apareció mi abuela con un cuchillo de cocina de hoja ancha en una mano y una gran jarra de cerámica en la otra. Nuestro trabajo, el de los niños pequeños, era sujetar el rabo del cerdo. “Para que no escape”, decían. Ahora creo que los niños participábamos en una experiencia como simple aprendizaje para el futuro. Mi abuela acuchilló al cerdo en el cuello y fue recogiendo la sangre que brotaba de la herida en la jarra para hacer después morcillas de arroz. Tras quemar la piel del cerdo con paja encendida para eliminar los pelos, se descuartizaba el cerdo y se iban procesando todas las partes que se convertirían en conservas de carne: jamones para secarlos, la sangre con arroz para morcillas con los intestinos, que también servían para longaniza y chorizo embutidos de la carne sobrante con sal y especias y se guardan en aceite de oliva, de la misma manera que los trozos de lomo. Se comía, el morro de cerdo, la lengua, las orejas, las galtas, los pies…todo.

Hoy en día, quien cría un cerdo tiene que llevarlo a sacrificar al matadero para que pase los controles sanitarios oportunos. Está bien, pero nada es igual: ni la morcilla, ni el lomo, ni tan siquiera el jamón. Aun así, yo creo, que echaría de menos el jamón, porque el jamón es, de alguna manera, el sabor de mi infancia.

Hace años le pregunté a una japonesa que vive aquí hace años: «¿Qué es lo que más echas de menos de Japón?» «Gobo», respondió. ¿Gobo? Increíble.


Si vives fuera de tu país, ¿qué es lo que más echas de menos? Si vivieras fuera de él, ¿qué echarías más de menos? Me gustaría saberlo.


Spanish jamón

If I lived abroad, I asked myself some days ago, would there be something I would really miss? The fact that our incorruptible politicians are totally dedicated to the people’s welfare and not to keep their seats? No. The taxes we pay on the level of the first world? The services we get on the level of the third world? Nope. An unemployment rate under 30%? The waiting list of our public health system? Our public offices or justice system’s diligence and efficiency? Yearly reductions of teachers’ salaries, which are clearly unavoidable? The answer would always be no.

I would miss jamón.

Jamón, a little bit of good wine, a sense of humour, the privilege of having a job and being able to enjoy it and, above all, family is what compensates for all the rest.

More than 40 years ago, when I was four or maybe five, I went to the village where my grandparents lived to take part in the slaughtering of a pig. Every family used to buy a piglet every year, which they raise in a pigstall basically on family leftovers. At the start of winter, maybe in December, the pig slaughtering was a kind of feast, where some families took part helping out to transform almost every gram of the animal into different products. I remember that some men raised the pig onto a structure shaped as an U. While they were holding it down, my grandmother came with a big knife in one hand and holding a big pitcher with the other. Our job, what small children had to do, was to hold the pig’s tail. “So it won´t run away”, they said. Now, I believe that children participated in that way in something which would be a valuable experience for their future. My grandmother stabbed the pig´s neck and collected its blood that sprang up from the injury in the pitcher. It would be used later to make blood rice sausage called “morcilla”. The pig’s skin was burnt with some straw to remove hairs, the pig was quartered and all the parts were processed to become preserved meat: Pig’s legs would dry to become “jamón”. Intestines were stuffed with blood, rice and pine tree seeds to become “morcilla”. They could also be stuffed with meat scraps, salt and spices to make longaniza or chorizo and were preserved in olive oil jars, in the same way as loin. Almost everything was eaten, pork snout, tongue, ears, cheek, feet… everything.

Nowadays, people raising a pig at home cannot slaughter  it at home. They must bring it to a slaughterhouse to pass the  opportune health controls. That is the right thing to do, I am sure, but nothing is the same, yet: neither morcilla nor loin, not even jamón. Despite it all, I believe I would miss it so much if I were to live abroad, because  my childhood, somehow, had the taste of jamón.

スペリング - Ortografía - Orthography



日本語と比べれば、スペイン語のスペリング学習なんて楽勝にちがいない。英語と比較しても同じことが言える。スペイン語と英語を比べると、スペイン語の方が、「スペリング」と「発音」、つまり、言葉の「書き方」と「発音の仕方」がずっと似ている。それなのに、スペインの学校でスペリングの学習といえば、かなり長いプロセスと労力を要するもので、しまいには生徒も教師も匙を投げてしまうことが多い。

スペイン語のスペリング基準が最初に統制されたのは、18世紀の半ばだった。中南米大陸の大部分がスペインの植民地だった時代だ。19世紀に入ると各地で独立運動が始まり、今日のスペイン語圏中南米諸国が形成されていった。独立によって、地方ごとのスペイン語の違いはますます目立つようになり、スペイン語のスペリングが発音に近づく可能性は途絶えてしまった。以来、スペリングの統制は、「スペイン語を『一定の場所で使われているスペイン語』に統一し、『その他』は排除する」ということを意味するようになった。スペリング基準の再編成は、政治的に歓迎されるものじゃない。様々なバリエーションを持つこの言語の「分裂」を招いてしまう可能性があるからだ。とはいえ、分裂は遅かれ早かれやってくるだろう。

まあ実際のところ、スペインでも大西洋の向こうでも、政治家たちはスペリングの統制なぞに力を入れている場合じゃなさそうだ。一方で、教育現場では、「スペイン語はより合理、道理にかなった方法で書かれるべき」と考える教師たちもいる。「古いから」という理由だけで伝統に従うのは不条理だ、というわけだ。もっとも、伝統というのはだいたいの場合、厳密に古いわけじゃなく、後で作られたものであることが多いのだが…。

だいたい、世界で約5億人が使用していると言われるスペイン語の書き方を、今さら誰が変えられるというのか。そんなことは誰にもできない。僕だって、やってみようとも思わない。とはいえ、過去には、ノーベル文学賞を受賞したガブリエル・ガルシア・マルケスフアン・ラモン・ヒメーネスをはじめとする多くの著名人が改革を試みている。ただし、実現できるかどうかは別問題だ。その可能性は、ブタの両耳をひとつに縛れる確率に等しい。

とはいえ、僕は何者でもないので、ここで自由に提案させてもらおう。

1.「H」は発音しない。よって、無駄な文字だ。今日(“oy”=hoy)から、この文字は消してしまおう。もう不要(no “ace” falta=no hace falta)。

2.アクセントは無駄。同音異義語は、他の国の言語と同じように、文脈によって判断しよう。

3.「K」と「QU」は、まぎらわしい。「カ、ケ、キ、コ、ク」は、「CACECICOCU」、「サ、セ、シ、ソ、ス」は、「ZAZEZIZOZU」に統一しよう。「Cero」は「Zero」、「Cierto」は「Zierto」と書こう。

4.「V」は除去しよう。これからは全部「B」。

5.「ガ、ゲ、ギ、ゴ、グ」は、「GAGEGIGOGU」に統一しよう。「Guitarra」は「Gitarra」、「Guerra」は「Gerra」と書こう。

6.「ハ、ヘ、ヒ、ホ、フ」は、「JAJEJIJOJU」に統一しよう。「Gestión」は「Jestion」、「Gitano」は「Jitano」と書こう。

7.「LL」にアディオスして、「Y」に統一しよう。
Si yuebe, no bamos a sacar a las gayinas.(=Si llueve, no vamos a sacar a las gallinas)

8.母音の「Y」は、「I」に統一しよう。
Boi a ber a Bizente i a su ermana(=Voy a ver a Vicente y a su hermana)

9.「X」は、「S」と発音する場合、「S」と書くことにしよう。
Ezto es un esplorador mui esperto(=Esto es un explorador muy experto)

10.さらに革新を進めて…、「Ñ」を抹殺してみてはどうだろう?パソコンが安く上がるかもしれない。「España」ではなく、「Espanya」。「スペイン語がカタルーニャ語になっちまう!」と青ざめる人が出てくるかもしれない。

…この辺でやめておこう。僕はもう20年以上も彼らのスペリングを訂正してきたが、実際に生徒たちの書き方、文章は、上記の例文とそっくりなのだ。だったら、こっちの方が自然なスペリングということだろう。僕だってしまいには、生徒たちと同じような書き方をしてしまいそうだ。

それに、ことわざも言っている。「敵が手に負えないなら、手を結んでしまえ」

Ortografía

Comparada con el sistema de escritura japonés, se podría decir que el aprendizaje de la ortografía del español es mucho más sencillo. Incluso si comparamos la distancia entre la escritura y la pronunciación en inglés y en español, resulta que la diferencia entre la manera de escribir las palabras y su pronunciación en español es mucho más cercana que en el caso de la lengua inglesa. Sin embargo, el aprendizaje de la ortografía en las escuelas españolas es un proceso muy largo, costoso y que acaba en muchas ocasiones con la paciencia de alumnos y profesores.

La primera regularización ortográfica en español se hizo a mediados del siglo XVIII, cuando buena parte del centro y el sur de América pertenecían a la corona española. Desde principios del XIX se produjo el proceso de independencia que llevó a crear la mayoría de los estados hispanoamericanos actuales, y que ocasionó que no se haya podido acercar de manera significativa nunca más la ortografía en español, porque con la independencia se han ido acentuando las diferencias entre dialectos. A partir de ese momento, regularizar la ortografía implica decantarse por una variante dialectal. Políticamente interesa poco, porque podría provocar la ruptura final de la lengua entre muchas variantes, cosa que al final sucederá de todos modos, antes o después.

Si bien es cierto que no muchos políticos de aquí o del otro lado del Atlántico estarían por la labor de regularizar la ortografía, me da la impresión que algunos profesores estarían mejor dispuestos a basar la manera de escribir nuestra lengua en la lógica y en la razón antes que en la inconsecuencia que supone muchas veces seguir unas tradiciones cuyo único mérito es que son viejas, y que muchas otras veces ni tan siquiera tienen ese, porque son inventadas.
Y ¿quién es este individuo, alguien se preguntará, para pretender cambiar la manera de escribir de casi 500 millones de hablantes de español? Nadie. Ni tan siquiera lo pretendo, aunque personas más conocidas como los premios Nobel de Literatura Gabriel García Márquez y Juan Ramón Jiménez, por ejemplo, entre muchos otros, hayan coincido en la necesidad de hacerlo. Pero conseguirlo es otra cosa. Tenemos las mismas posibilidades que las que tenemos de conseguir atarle las orejas a un cerdo.

Aun así, como no soy nadie, puedo proponer lo que me dé la gana:
1    1. La”h” no se pronuncia: es una letra inútil. Desde oy la eliminamos. Ya no nos ace falta.
      2.    Los acentos no sirven para nada. Las palabras que se pronuncian igual, como en todas las lenguas, por el contexto.
     3.    K y QU son repetitivas. Mejor CA, CE(como KE o QUE), CI (como KI), CO Y CU. Tambien ZA, ZE, ZI, ZO, ZU. “Zero”, “Zierto”.
      4.    Bamos a eliminar la “V”. Todo “B”: a ber ce opinan los de Balencia y Balladolid.
      5.    GA, GE (antes “gue”), GI (antes “gui”), GO, GU. “Gitarra”. “Gerra”.
      6.    JA, JE, JI, JO, JU. ”Jestion”. “Jitano”. 
      7.    Adios a la “LL”. Todo “Y”. “Si yuebe, no bamos a sacar a las gayinas.”
      8.    La “Y” bocalica debe ser “I”. “Boi a ber a Bizente i a su ermana”.
     9.    La “X”, si se pronunzia “S”, se debe escribir “S”. “Eztor es un esplorador mui esperto”. 
    10.  I bamos a ser aun mas reboluzioinarios. ¿I si nos cargamos la “Ñ”?  Tal bez nos saldrian mas baratos los ordenadores. Diriamos: “Espanya”. Alguno se orrorizaria diziendo que emos trasformado el espanyol en catalan. 

¿I para ce seguir? Durante mas de veinte anyos e estado corrigiendo testos i frases de mis alumnos como las ce estoi escribiendo, ce son el resultado de la ortografia natural i aora me beo escribiendo como eyos.

Ya lo dize el refran: “Si no puedes con tu enemigo, unete a el.”

Orthography

If we compare the Japanese and Spanish writing systems, it will be easy to see that the Spanish one is much simpler and easier. If we compare the distance between the written language and how we pronounce English or Spanish words, the conclusion is that written Spanish is much closer to spoken Spanish than written English is to its oral version. However learning Spanish for our students is a long and hard process that is often trying both for students and teachers.

The first orthographic regularization for the Spanish language was done in the middle of the 18th century, when most of Central and South America belonged to the Spanish crown. From the beginning of the 19th century most Spanish colonies in America got their independence, and this fact indirectly caused that It has not been possible ever since to carry on a further regularization of orthography, because from the moment our former colonies got their independence, every dialect of Spanish in America became more and more different from the Spanish standard, and every change in orthography would mean opting for a specific dialect and discarding the others.  From a political point of view, changes in orthography would not be welcomed, because that could bring disagreements and the final rupture of Spanish into many different languages. Anyway, that is sure to happen, sooner or later.

It is true that many politicians would here and at the other side of the Atlantic Ocean would not be for orthography regulation, but I am sure that some teachers would prefer teaching a language based on common sense and reason and not on following inconsequent traditions, whose only merits are old age, when they have it, because many of them are just inventions.
And who is that one, some may ask, who wants to change the way of writing of 500 million Spanish speakers? This one is no one. I even do not have any hope about the future of the idea, even though well-known people such as the Nobel Prizes for Literature Gabriel García Márquez y Juan Ramón Jiménez, for instance, among many others, have agreed that there is a need to do so. But need and achievement are two different things. We have got the same possibilities of success that we had if we tried to tie up a pig´s ears.

I have been correcting students’ sentences and texts which were in fact the result of applying the natural orthography I am for, so I may well end up writing in the same way they do.

As the proverb says: “If you cannot beat them, join them.”
