生徒マノーリ - Manoli




生徒マノーリ

マノーリの本名は、マノーリではない。そう呼ばれるのは、名前がマノーリに少し似ているから。マノーリは僕の生徒で、彼女の両親はモロッコからの移民だ。彼女は決して勉強熱心なタイプではない。最後の学期では数科目落第した。先週の月曜日、寝坊して朝8時20分に職員室にやってきた。そこで、ひとつ聞いてみた。

「料理できる?」
「スクランブルエッグだけならできるよ」
「あ、そう。君の成績なら、将来は主婦になるしかなさそうだけど、料理もできないんじゃ
「仕事はなにか見つけるよ」
「さあ。学歴もなくて、その名前と名字(モロッコ人の名字)だったら、不況の今いったいどんな仕事につけるかなあ。お母さんの作る料理好き?」
「うん。2時間かけてクスクス作るよ」
「おいしい?」
「すごくおいしい」
「おばあちゃんの料理は?」
「もっとおいしい」
「じゃ、君はなんで料理できないのかなあ。ひとり暮らしするようになったらどうする?子供ができたら?」
「だって、わたしが台所に入ったら、お母さんに追い出されるんだもん」
「理由はだいたい想像がつくけどね。僕もよく母に、『男のくせになんで料理を覚えたいの?』って言われたからね。そうそう。僕の前妻も君みたいに料理が全然できなかったから、おいしいものが食べたい時は

今日、マノーリはまた職員室にやってきて、あいさつもそこそこにこう言った。
「お母さんに料理教えて、って聞いてみた」
「で、なんて言われた?」
「『どんなにゴマすっても、悪い点数とってきた罰は帳消しにならないからね』って言われた」
「で?」
「本当に料理を覚えたい、って言ったら、変な顔された。どこか具合でも悪いのかと思われたみたい」
マノーリは笑って、お母さんの声を真似て、甲高い声でこう言った。
「何がほしいの?!この前スマートフォン買ってあげたばかりじゃない!」
彼女はまた笑って、職員室を出る前に、こう付け加えた。
「今週末、おばあちゃんのココナッツクッキーをいっしょに作ろう、だって」

僕はそのレシピを持っている。それは10年前、別の学校で、やっぱりモロッコ人移民の生徒からもらったおばあちゃんのレシピと同じだった。

Manoli no se llama Manoli. La llaman así porque su nombre real se parece bastante. Es hija de inmigrantes marroquíes y alumna mía. No es precisamente una adicta al trabajo. Ha suspendido unas cuantas el último trimestre, La semana pasada, el lunes, apareció por mi despacho a las ocho y veinte porque se había dormido.

─¿Sabes cocinar? ─le pregunté cuando entró por la puerta.
─Solo huevos revueltos ─respondió.
─Pues con las notas que tienes, vas a tener que acabar de ama de casa, y si no sabes cocinar…
─Pues ya trabajaré de algo ─respondió.
─Pues sin estudios, con ese nombre y apellido y el paro que hay, no sé de qué… ¿Te gusta la comida de tu madre?
─Sí. Se pasa dos horas para hacer cuscús.
─¿Bueno?
─Muy bueno.
─¿Y la de tu abuela?
─Más.
─Pues no sé por qué no sabes cocinar. ¿Qué vas a comer cuando vivas sola, o cuando tengas hijos?
─Mi madre siempre me echa de la cocina.
─Me imagino por qué. Mi madre decía que para qué quería un hombre aprender a cocinar, y ya ves, mi primera mujer era como tú: no tenía ni idea, así que si quería comer algo bueno…

Hoy ha vuelto a aparecer por el despacho. Hoy no ha llegado tarde al colegio.
─Le he dicho a mi madre que me enseñe a cocinar ­─me ha soltado sin decir ni «hola».
─Y ¿qué te dijo?
─Me dijo que no me iba a quitar el castigo por sacar malas notas aunque le hiciera la pelota.
─¿Y…?
─Le dije que quería aprender a cocinar y me miró muy raro, como si estuviera enferma o algo ─se rio mi alumna.
Entonces, mi alumna ha puesto una voz chillona intentando imitar a su madre y ha dicho: «¿Qué es lo que quieres ahora? ¡Ya te compramos un Smartphone hace poco!»
Y ha vuelto a reír. Luego, se ha girado para irse, pero antes de salir del despacho, ha añadido:
─Me ha dicho que el fin de semana haremos galletas de coco al horno de la abuela.

Esa receta la tengo. Hace más de diez años, en otra escuela, otra alumna de origen marroquí me pasó la receta de su abuela.

Manoli

Manoli’ s name is not Manoli. They call her like that, because her real name sounds  more or less the same. She is the daughter of Moroccan couple living here and my student. She is not exactly a workaholic. She had some failed grades last semester, too. Last week, on Monday, she appeared in my office at twenty past eight because she had overslept.

─Are you any good at cooking? ─I asked her at the moment she came in.
─Just scrambled eggs ─she answered.
─With your grades, you know you’ll end up as a housewife, and if you cannot cook…
─I’ll find a job ─she said.
─Without qualifications? With that name and surname? With our unemployment rate…?
Do you like what your mum cooks?
─Yes. It takes her two hours to prepare cuscus.
─Good?
─Very good.
─What about your granny’s cooking?
─Better.
─In that case, I don’ t understand why you can’ t cook. What will you eat when you live by yourself or when you have children?
─My mother always throws me out of the kitchen.
─I can imagine why. My mother told me she couldn´t understand why a man like me wanted to learn how to cook, and you see, my first wife was someone like you. She had  no idea of cooking, so whenever I wanted to eat something good…

Today she has come to my office, again. Today she was not late at school.
─I’ve told my mother that I want to learn how to cook ─she has told me without even saying ‘hello’.
─What did she say?
─She said she was not going to lift the punishment for bad grades just in case I was trying to lick her boots or something.
─And?
─I told her I wanted to learn how to cook and she looked at me as if I was ill or something ─she laughed.
Then, my student has changed her voice into a high-pitched tone, as if she was trying to imitate her mother´s: `What are you looking for, now? You have got a smartphone not so long ago!´

She has laughed, again. Then, she has turned round to go, but before leaving my office, she has added:
─She has told me we are going to make granny`s coconut cookies at the weekend.

I already got that one. More than ten years ago, at another school. Another student with Moroccan parents gave me her granny's recipe.

バルセロナの居酒屋 - Una izakaya en Barcelona - An izakaya in Barcelona




Can Kenji」は、バルセロナで日本食が食べられるだけの店とはひと味違う。まず、店名が変わっていて、カタルーニャ語「Can(〜の家)」とシェフの名前「Kenji」が使われている。店のサイトを見れば、オーナーのフィロソフィーがわかる。型にはまらない日本食。和食でありながら、地中海のタッチが加わった料理。地元食材へのこだわり。



Can Kenji」はバルセロナのEixample(スペイン語ではEnsanche)地区に位置している。メトロの最寄り駅はGironaで、市の中心部からそれほど離れてはいない。店の内観は少し古びた感じだが、わざとそうしているのかもしれない。テーブル数は少ないが、いつも混んでいる。予約しないで行くと待たされるのはほぼ確実だ。昼はご飯、みそ汁、飲み物、デザートつきの定食がある。全部で10ユーロちょっとだが、僕らの場合は追加で単品を頼むことが多い。量は居酒屋サイズなので、スペインの定食より少なめだ。これまで食べたメニューはだいたいどれも美味しかった。そう、この店が特別なのは、「美味しいから」なのだ。





Una izakaya en Barcelona

Can Kenji no es otro lugar más en Barcelona para aquellos que buscan los platos de cocina japonesa más tópica. El mismo nombre no es tópico, ya que mezcla una palabra catalana (can significa «casa de») con el nombre del chef y propietario. En su página web se puede leer la filosofía del local: platos de cocina japonesa no demasiado típicos y otros que, sin dejar de ser platos de cocina japonesa, tengan un toque mediterráneo. Y productos locales.




Can Kenji está situado en el barrio del Eixample (Ensanche en español) muy cerca de la estación de metro de Girona, y no muy lejos del núcleo central de la ciudad. La estética de Can Kenji no es muy cuidada. Hay elementos que parecen gastados por el uso, aunque tal vez sea deliberado que sea así. No es un local con muchas mesas, pero sí con bastante éxito, así que puede ser arriesgado ir sin reserva previa. A mediodía se puede comer un menú que incluye un plato principal a escoger, conun bol de arroz, sopa de miso, bebida y postre, que costará un poco más de 10 euros, pero solemos gastar algo más en algunos platos extras: de un lado, porque las cantidades en los platos son típicas de izakaya, pero no muy abundantes para el estándar de aquí; pero sobre todo, porque los platos que he probado hasta ahora nos han parecido en general muy buenos. Ese es el punto principal que hace el lugar tan especial: lo buena que está la comida.





An izakaya in Barcelona

Can Kenji is not just another place in Barcelona for those looking for the typical dishes of Japanese cuisine. The place name is not typical, either, because it mixes a Catalan word (can stands for -s- as in Kenjis) with the chef and owners own name. On its website we can read about its philosophy: not very typical Japanese cuisine dishes combined with a touch of Mediterranean cooking ways. And local products.




Can Kenji is situated in a part of the city called Eixample, close to Girona underground station and not far from the most central part of the city. The place looks a bit shabby to me, but I think that may well be quite deliberate. It is not a big place, but it is a fairly successful one, so it could be risky going without booking in advance. You can have a fixed price menu for lunch with the main dish you choose, which goes with a bowl of steamed rice, miso soup, a drink and dessert. That will surely cost about 10 euros. We usually spend some more in extra dishes: first, because the dishes at an izakaya are usually not that big, at least for our standard; but secondly and more important, because all the dishes we have tasted up to now were really good. That is the places main point: Can Kenjis food is delicious.

教室での正しい座り方 - Cómo sentarse bien en clase - How to sit in the right way in the classroom

"わたしが今この作文を書いているのは、「君に正しい座り方を教えるのはもううんざりだ」と先生に言われたからです。先生の言うことを無視している訳ではありません。ただ、わたしにとって、正しく座るということはとても難しいのです。わたしはいつも、ブランコに乗っているみたいな姿勢で座りますが、他にもいろんな座り方を知っています。座り方にかけてはかなりの経験があります。幼稚園の年長組にいたときから、座り方をめぐってさんざん叱られてきたからです。

罰の方法は先生によって様々でした。たとえば、ドロールズ・ビラ先生には、休み時間なしにされました。マリア先生には、脚の間にスティックのりを挟まれました。わたしがニワトリみたいな座り方をしようとするとのりが落ちて、先生がすぐに気づく、という仕組みです。エリ先生は、わたしに「鳥のエサ」という言葉を言わせ、座り方に気づかせることで直そうとしました。小学校では、先生が隣に座って、「ちゃんと座らなかったらガムテープで椅子に縛りつける」と脅されました。でも、実現したことはありません。叱らなかったのは、マルタ先生とマリ・カルメン先生だけでした。わたしのことをかわいそうと思ったのか、罰を与えるのが嫌だったのかはわかりません。個人的には後者の理由の方が好きですが、実際は前者だったと思います。こればかりは、先生本人に聞いてみないとわかりません。

わたしは今中学1年生。いまだにきちんと座れません。でも、成長しました。今はニワトリが卵を温めているような格好では座りません。そのかわりに、ブランコに乗っているみたいに揺れます。長年の結果がこれです。中学校の先生たちも、わたしの座り方を直そうとしています。「金曜の放課後4時から5時まで残っていなさい」だとか、「教室の一番後ろに立っていなさい」だとか、今みたいに「300語で作文を書きなさい」だとか…。わたしは座り方が悪い上に、すごくしつこいので、わたしを放っておく先生や、廊下に追い出して一休みする先生もいます。わたしは罰の方がマシだと思っています。

先生たちも、もうどうしていいのかわからないのだと思います。その気持ちもわかります。先生たちは、これからもまだまだいろんな罰を見つけるでしょう。そして、わたしはその罰を受け入れていくことでしょう。"


アイシャ(生徒の名前)は間違っている。彼女はしつこい生徒じゃない。賢くて、授業に積極的に参加し、社交的で、いつも陽気な生徒だ。当然、僕は彼女にこう言った。「今後、僕のクラスでは、好きなように座りなさい」と。


¿Cómo sentarse bien en clase?

«Estoy haciendo esta redacción, porque el profe dice que ya está harto de avisarme sobre cómo tengo que sentarme. No es que no quiera hacerle caso; es que me cuesta mucho. Normalmente me siento columpiándome, pero sé sentarme de muchas otras formas, porque tengo mucha experiencia. Cuando iba a P5, ya me pegaban la bronca con el tema.

Cada maestra tenía una forma diferente de castigarme. Por ejemplo, La señorita Dolors Vila me castigaba sin patio. La señu Maria me ponía una barra de pegamento entre las piernas y así, cuando me iba a sentar como una gallina, el pegamento se caía y se daba cuenta, y la señu Eli me decía la palabra “alpiste” para que me diera cuenta y me sentara bien. En primaria, una profesora me sentaba a su lado y me amenazaba con atarme con celo a la silla, pero nunca lo hizo. Las únicas que no me pegaban la bronca eran la señu Marta y la señu Mari Carmen. Igual les daba pena o se sentían mal castigándome. Me gusta más la segunda opción, pero yo creo que era más bien la primera. Para saberlo, se lo debería preguntar.

Ahora ya estoy en primero de ESO y sigo sentándome mal, pero he progresado. Ya no me siento como una gallina incubando un huevo, sino que me columpio. Tantos años para eso. Pero los profes de ESO siguen intentándolo. Que si me quedo castigada los viernes de cuatro a cinco de la tarde, que si me ponga al final de la clase, que si le escriba esta redacción de trescientas palabras… Yo creo que es peor los que ya pasan de mí, o la que me saca al pasillo para descansar de mí un rato, porque aparte de sentarme mal, soy muy pesada.

Ya no saben qué hacer y lo comprendo, pero seguro que les quedan muchos castigos para inventar y yo me quedaré para cumplirlos».

Aisha no tiene razón. No es pesada. Es inteligente, participativa en clase, sociable y siempre está alegre. Por supuesto, le he dicho que a partir de ahora, en mi clase, puede sentarse como le dé la gana. 



How to sit in the right way in the classroom

«I am writing this composition, because my teacher says that he is fed up with my way of sitting in the classroom. It is not that I don´t pay attention to what he says. It is just that it is very hard for me to sit in the right way. I usually sit as I was on a swing, but I can do it in many other ways, because I have a very long experience since I was at nursery school. Then, I was already told off because of that.

Every lady teacher had a different punishment for me. For instance, Miss Dolors Vila made me stay in the classroom while the others went to the playground. Miss Maria put a glue stick between my legs. So, when I was in the point of sitting like a hen, it fell down and she noticed. And Miss Eli said the word “birdseed”, so I could realize what was happening and could sit in the right way. During primary school, a lady teacher made me sit just beside her table and threatened me with tying me up to the chair with tape, but she never did it. The only ones who never told me off because of that were Miss Marta and Miss Mari Carmen. Maybe they felt pity or felt bad if they punished me. I would prefer to think the second option was right, but I would rather say the right one was the first. To know that, I would have to ask them.

Now I am in my first year of secondary school and I keep on not sitting in the right way, but I have made some progress, somehow. I do not sit anymore like a hen incubating an egg, but I swing on the chair. So many years to reach that point. But the secondary school teachers keep on trying: Sometimes I have to stay at school on Friday afternoon from 4:00 pm to 5:00 pm to do extra work. Sometimes I have to sit at the end of the classroom, and today I have to write a 300-word composition on my problem… I think the worst is when teachers ignore me, or the one who makes me stay out in the corridor for a while, because, apart from not being able to sit in the right way, I am very tiresome.

They do not know what to do anymore and I can understand it, but they will surely be able to invent many different punishments and I will stay in to carry them out».

Aisha is not right. She is not tiresome. She is intelligent, always participative in lessons, sociable and she is always cheerful. Of course, I have told her that from now on she can well sit as she prefers. .

スペインでキムチを作る - Cómo hacer kimchi en España - How to make kimchi in Spain




スペインでキムチを作る

キムチは代表的な韓国料理のひとつだ。白菜、唐辛子、その他いろんな材料が入っていて、辛い味がする。ラーメンパエジャのようなポピュラーなメニューならいつもそうであるように、作り方は場所によって変わってくるはずだ。キムチは日本でも人気メニューとあって、我が家でもよく食べる。近所の韓国人家族が親切にもスペインでどうやってキムチを作るのかを教えてくれた。

バルセロナでは、中国人の経営するアジア食材店でほとんどの材料を買うことができる。手に入りにくい材料は韓国食材店で売っている。

材料
白菜1kg、カブ12本(あれば大根)、人参1本、ニラ、ネギ(好みで)、リンゴ1/2個、ニンニク1/2個、ショウガ45片、イワシの塩辛エキス、米粉、水、塩、砂糖、胡麻、唐辛子50gくらい(好みで)


下準備

白菜を洗って好みの大きさに切る。白菜の重さ510%の塩をまぶし、45時間置く。

白菜を流水で洗って、ざるでよく水を切る(しぼらない)。



作り方
1
カブ、人参、ニラ、ネギ、リンゴを好みの大きさに切ってボールに入れる。

ニンニクとショウガを細かく砕く(またはすりおろす)

小鍋に水と米粉を入れ、温めながらペースト状にする。沸騰したら止めて冷ます。

23に入れて混ぜる。

4に、イワシの塩辛エキス、砂糖、胡麻、唐辛子を入れて混ぜる(量は好みで調節)。

51に入れてよく混ぜる。

白菜を6.に入れてよく混ぜる
8
7.を密閉容器に入れて、1、2日間は常温保存。その後は冷蔵庫で保存する。数日後、食べ頃に。




Cómo hacer kimchi en España

Kimchi es uno de los platos más famosos de la cocina coreana. Suele llevar col china, pimiento rojo picante molido y otros ingredientes y tiene sabor salado picante. Supongo que, como cualquier plato muy popular, como el ramen o la paella, el kimchi tiene casi tantas maneras de prepararlo como lugares donde se hace. Es un plato también muy popular en Japón y se ha hecho habitual en mi casa (nos encanta) gracias a una familia coreana que ha sido tan amable de enseñarnos cómo hacen kimchi en España.

En Barcelona se puede encontrar casi todos los ingredientes en los supermercados chinos. También hay una tienda coreana donde se puede buscar algún ingrediente más difícil de conseguir: HANKUK. Ingredientes
1 kg de col china, uno o dos nabos, una zanahoria, nira, cebolla tierna, media manzana, media cabeza de ajos, 4 o cinco trozos de jengibre fresco, salsa de boquerones, harina de arroz, agua, sal, azúcar, sésamo y 50 gr de pimienta roja picante para kimchi.

Preparación previa

Lavar la col china y cortarla en trozos. Mezclar con sal (5-10% del peso de la col china) y dejarla reposar durante 4 o 5 horas.

Lavar la col bajo el grifo y escurrirla bien (sin estrujar).


Preparación
1
Cortar los nabos, la zanahoria, la nira, la cebolla tierna y la manzana a trozos y reservarlos en un bol grande.

Picar los ajos y los trozos de jengibre.

En un cazo, calentar el agua con la harina de arroz hasta que hierva y la mezcla quede espesa.

Añadir a esta mezcla los ajos y jengibre picados y mezclar.

Añadir la salsa de boquerones, azúcar, sésamo y pimienta roja y mezclar.

Verter el resultado del nº5 en el bol del nº 1 y mezclarlo bien.

Añadir la col china cortada al nº 6 y mezclar bien.

Meter el nº 7 en un recipiente hermético y dejarlo durante uno o dos días a temperatura ambiente. Después, meterlo en la nevera. Después de algunos días, habrá cogido el sabor adecuado.




  
How to make kimchi in Spain

Kimchi is one of the best-known dishes in Corean gastronomy. It is usually made with Chinese cabbage, grounded red hot pepper and other ingredients and it tastes hot and salty. I guess that, like in many other popular dishes, such as ramen or paella, there are as many ways to prepare it as places where people do it. It is also very popular in Japan and we usually have some at home (we love it) thanks to a Corean family who have been so kind to show us how they prepare kimchi in Spain.

In Barcelona you can find almost every ingredient in big supermarkets or in Chinese supermarkets. There is also a Corean shop where you can look for a specific ingredient you cannot find elsewhere: HANKUK at Marquès de Sentmenat street, 91 (near Central Railway Station Sants). http://www.alimentacioncoreana.com/

Ingredients
1 kg Chinese cabbage, turnips (one or two), a carrot, nira, spring onion, half an apple, some garlic cloves, 4 or 5 pieces of fresh ginger, anchovy sauce, rice flour water, salt, sugar, sesame and 50 gr of red hot grinded pepper for kimchi.


Previous preparation

Wash the Chinese cabbage and cut it into pieces. Add salt (5-10% of the weight of the Chiniese cabbage). Leave the Chinese cabbage with salt for 4 or 5 hours.

Rince the Chinese cabbage under running water and drain in a strainer (do not wring).





 



Procedure

Cut into pieces the turnips, carrot, nira, spring onion and apple and put them in a big bowl.

Chop finely both garlic and ginger.

Boil water and rice flour in a saucepan until the mix gets thick.

Add chopped garlic and ginger to 3 and mix.

Add anchovy sauce, sugar, sesame and red hot pepper to 4 and mix.

Pour 5 into the bowl with 1 and mix.

Cut into pieces the Chinese cabbage, add to six and mix.

Put 7 in a airtight food container and let it there for one or two days at room temperature. Then, put it into the fridge. It will be ready to eat after some more days.
